Lentil and Black Bean Soup


I'm something of a soupaholic in winter. I find soup to be filling, comforting, and the perfect way to include all kinds of healthy stuff like beans, veggies, and grains in my diet. It's the perfect antidote to a holiday season's worth of indulgence. Soup certainly doesn't have to contain meat to be satisfying, although most of us like our steaming bowls of chicken soup from time to time. Soup doesn't need cream to be filling. If I want a thick, smooth, velvety soup, I can puree some of the beans or vegetables, or add a little fat-free half-and-half or evaporated milk. Soup is also easy to make. There are very few rules, and it's hard to add "too many" vegetables. The only issue is making sure there's enough liquid, and cartons and cans of fat-free broth make that easy enough. Here's a particularly hearty and delicious Lentil and Black Bean Soup. If you use vegetable broth, it makes a great vegetarian offering.
