One-Bowl Breakfast Cookies


I had one speckled banana left in my fruit bowl. I already have small supply of these stored in my freezer, ready to use in fruit smoothies. So what to do? After rummaging around in my pantry, grabbing some oats and a package of dried mixed fruit, and so forth, I decided to add these to my ripe banana and make some breakfast cookies. I use the term 'cookie' loosely. These little breakfast bites are kind of a cross between a soft cookie and a muffin. Two of these little breakfast cookies, along with some low-fat yogurt and a serving of fruit, would make a great start to the day.
